I think its strange that with all the books and trainers out there telling you how to make espresso that results with crema and a sweetish taste which doesn't give you indigestion that when you go to so many cafes, you still can't get a properly made espresso. I mean it's not that difficult if you follow the basic rules - I've tried on my own domestic machine and my espresso, I believe, doesn't look like the stuff they serve out there whether I'm in Vienna, London (with some exceptions) and other places. So what is going wrong with these places that always boast about their coffees
