Coffee of the Week: Balthasar’s Honduras Los Ceibos

This week’s coffee hails from Honduras – Los Ceibos – Microlot, a coffee of the red bourbon variety, grown at 1,380 m, naturally processed with a taste profile of strawberry, rhubarb and caramel, roasted for Balthasar, in Vienna. So, I’m using the aeropress, with 15.5g of freshly ground coffee and about 210ml of 95C hot water. I’m using the inverted method and filming from a sky view so that you can see the process from the top.

Drinking Very Fresh Coffee

 

I had the pleasure of visiting coffee expert extraordinaire Johanna Wechlesberger of Vienna School of Coffee last Wednesday (1 July 2020) and she gave me a Honduran 90 hour anaerobic fermented coffee, which she was roasting right in front of me on the Ikawa (wish list) to try out. As I was rushing back home, Jo gave me 15 grammes. So, just after 3 hours I cupped (tasted) the coffee using a French Press as recommended by Jo – who am I to argue.

Tastes – easy on the stomach, hints of lemon acidity, molasses and caramel came through. Watch the video for the oral experience.

Coffee of the Week: Rwanda

 
This week’s coffee hails from Rwanda-Umusazi, a coffee of the red bourbon variety, grown at 1,900mroasted for Balthasar, my fave coffee shop in Vienna. It was actually recommended to me by one of the baristi, who used this coffee last ear for a competition. It features the 72 hour fermented coffee processing method again, which almost guarantees a delicious fruity experience. So, I’m using the Hario V60 for this video, but I’ve adjusted the recipe somewhat. Typically, I would use about 15g of freshly ground coffee with about 240ml of 95C boilng hot water, but I found that when I increased the amount of coffee to 16.5C for the Hario V60 filter brewing method , I had the wow factor – what a fruit bomb, with berries, grapefruit acidity and hints of caramel in the middle of my tongue – In fact I’m drinking it now as I write this, yummy.

To summarise; 16.5g freshly ground coffee 95C 245ml hot water Hario V60 Hario V60 filter wet with hot water Makes about 235ml delicious coffee Yummy!

Coffee of the Week Video: Caravan Roastery Espresso

Caravan Coffee

So, this weeks coffee of the week comes from Caravan Roastery in  London. Before I delve into my experience and the video, a short history about them. In short Caravan have been around for many years, and I remember when I heard about their venture into London and how excited I was, but sadly I was already running my cafe in Cape Town. Nevertheless, I dreamt about visiting their cafe cum roastery in Exmouth Street, so much so that I often used to peruse their menu for ideas. In fact, I even have a confession or two. I amended my menu card to resemble theirs and furthermore, I added a new item to my menu, something back then I had never seen before, avocado toast with chilli flakes – very popular now of course.

In any case, I finally visited them a few years back, but it wasn’t until last year that I re-discovered their coffees once more based on their strategy to focus a lot more on coffee – they still have 5 restaurants with delicious looking menus. I must say that they have a great online coffee shop and they constantly have great deals. Usually, if I order, I get my coffees within the week and even better than that, they don’t ship just freshly roasted coffee. Does that sound strange ? Well, it doesn’t because when you order coffee, you want to start brewing it straight away and almost all but 2 roasteries (Caravan are one of them) always send you coffees that are too fresh to brew. Plus I love the little postcard containing info on the coffee.

So, last week, I finally received a huge , yes huge at 1kg of Daily – their espresso blend, which has a nice aroma. Watch the full video below for more.

Coffee of the Week: Honduras Coffee

 

The coffee of the week celebrates once again, Vienna based Roaster extraordinaire, Johanna Wechlesberger roastery, Die Roesterin – this time it’s a Honduran Coffee, macerated (another word for fermentation) for 72 Hours.

I know that sounds strange. In fact I had to search what kind of process this was. In summary, the coffee undergoes a 72 hour fermentation process, before it is aired naturally for about 40 days, before it’s green for roasting. You can imagine that such a method will defiantly lead to some kind of different taste profile and it did.

Here, I’m using an AEROPRESS, with the following;

  • 14.5g freshly grinded coffee
  • 93C brewing temperature
  • 212.5 ml of hot water

With this method, the coffee was amazing – like a party in my tongue, tropical fruits and medium acidity came to play, with a long aftertaste around the middle of my tongue.

I was at NightJar Coffee, Dubai

Lucky me…. really. I was in Dubai in mid-March, just before the lock down, flight bans, quarantine and more and just got back to Vienna on the last couple of flights until July 2020.

Back to lucky me…. I was actually in Dubai to investigate the possibility of moving there to set up a business/life coaching consultancy, which would also involve… you guessed it… working as a coffeepreneur. In any case, I was talking to Yashood, head barista of %Arabica on the Dubai cafe culture, specifically on the explosive coffee roasting trend and he recommended that I check out a newish joint, Night Jar – located in the trendy arty district, called Alserkal Avenue. I must admit that during our family vacation in July 2019, we visited Alserkal Avenue to check out a chocolate cafe/factory and I walked by Night Jar, but it looked closed, so I never ventured in.

LUCKY ME… because even with just one week in Dubai during these tough times, I was still able to discover and experience great coffee in Dubai.

Night Jar is located at Unit G62 Alserkal Avenue Al Quoz Industrial 1, close to the main entrance and you could easily miss it,  as the exterior is darkish with glass doors and their logo on top. As you walk in, there are rows of coffees on the right hand side for you to buy,

If you look slightly to your left, you’ll see a tiny hallway feature that looks closed to all but staff (I found out later that this passage leads to the roasting area, equipped with a Geisen coffee roaster). As you look further to your left, you’ll see the brew bar and delicious looking cakes on display. They have a BlackEagle espresso machine –

Being inquisitive, I asked about their roaster and was introduced to Chad from Cape Town, who previously worked for Truth Coffee for 5 years (an insight – when I moved to Cape Town in 2009 my initial plan was to launch Truth Coffee with David Donde but I felt that my heart was somewhere else – a lesson for anyone chasing their goals, which I also write about daily on Instagram as honestmanagement) – Nevertheless, what a coincidence, that I walk into a cafe in Dubai and the roaster used to work for a place I almost started out at. In any case during our brief chat, I could tell that Chad is a no nonsense kind of coffee guy – focused on sourcing and roasting the best with an innovative edge. He recommended that I try an espresso of their Colombian coffee, which was about to finish

I must confess it was one of the best espresso I’ve had in a cafe for a while – well balanced between acidity and fruity undertones and smooth to drink.

I couldn’t agree more.😋

However, I definitely needed to buy their coffees – Chad suggested their Rwandan coffee for espresso and the Kenyan for filter, which he very kindly refused for me to pay.

I was also tempted to buy a slice of cake, but we had just had one at Tom&Serg around the corner – my daughter was slightly upset as she said “daddy, we could have had these nice cakes here…” next time God willing.

More about NightJar – they source micro and nano lots, so their specialty coffee offering is really special as you might taste something incredible one day that may not be available the next – so buy the bag whilst you can. Their interior is L shaped, cosy and intimate – they also offer food and their menu looks great, I mean stuff like pulled ox benedict, Nigeria love rice, NZ meatballs, veggie specials and more – yum! so next time, I plan to make a meal of it (coffee, lunch and dessert) God willing. They offer nitro coffee, which is a sort of cold brew coffee charged with nitrogen to give it a rich, creamy head, similar to nitro draft beer like Guinness – in fact at Nightjar, the brew heads for nitro coffee look like how beer is dispensed but being Dubai, there’s no beer here.

Before I sign off, I have mention that I really love their fun theme on their packaging.

Very innovative.

I plan to meet their owner, who hails from New Zealand and who coincidentally again, is known by one of my contacts in Dubai.

London Coffee Report 2019

I couldn’t really see out 2019 without my annual London Coffee Report depicting my coffee escapades in my favourite coffee city, London. Just like last year, I decided to share with you a mix of the traditional and the new, which I visited during our annual London holiday. Just to make things exciting, if you pay attention you’ll notice that each shop had a common trait.

Monmouth Coffee, Borough Market

On this occasion, our daughter convinced us to try something new and so we headed off to Borough Market, close to London Bridge. Naturally I was intrigued, as I love food and coffee, knowing that Monmouth Coffee was also located within Borough Market. I’ve been to the one in Covent Garden but never to this one. As we walked around like tourists, taking in the sights, the smells of London street food, tasting artisan breads, pepper sauces, buying exotic spices and scratching our head as to what to eat, I finally spotted Monmouth on the left side as you exit the market. It’s actually located on a side road and it was literally bustling out of its side, with customers on the street.

As you enter the shop, there are seats to the front and left of you in wooden cubicle styles reminiscence of their Covent Garden branch. As you glance to your right, yo will see  the brew bar hosting a filter station and La Marzocco linea espresso machine. Just behind is the “coffee market” – coffee enthusiasts buying coffee from open wooden crates served by lots of staff. There’s lots of coffee from different parts of the World with scales to weigh your coffee – truly like a market. I quizzed the assistants as I wanted two distinctly different coffees for espresso and for filter.  Having bought my bags of coffee, I then had my daily cortado – more coffee than milk. Grab a seat outside on what was a hot London summer day.

The Shed, Clapham South Underground Station

Something New. When in London, we usually stay with my brother in Clapham but the closest station is Clapham South on the Northern Line. As we were rushing to catch the train on one of our first days, I caught a glimpse of a newish shop hosting a La Marzocco Linea machine.

Excited I popped my head in, took a picture and noticed with even more excitement, bags of Caravan  Coffee. I eagerly told the lone staff there that I’d be back. and so I was, ensuring that every time I headed off ahead of my family to order my coffee not just on one occasion but twice.

I found out that they had recently opened and were committed to using only Caravan coffee (fine by me). I definitely recommend Shed coffee on your way to work or if you are heading into London from that station, where you can get great Caravan roasted coffee prepared by very pleasant staff as well as some snacks like pastries, sandwiches and cakes.

Department of Coffee and Social Affairs, Soho and Paddington

Back to something traditional, the department of coffee and social affairs  – I like writing their name. I actually went to their spot at Paddington Central for my daily cappuccino before having lunch with my cousin in plush Paddington Central. Located in a a very avant garden building, they’ve tried to give it a homely feel with some wood decorations and sofas. There’s lots on offer from food, snacks, sandwiches and coffee of course.

For my second trip, I went to their shop on 3 Lowndes Court, just off Carnaby Street in Soho. It’s another very busy shop, visited by locals and tourists alike. As you enter, to the front of you is a shelf offering their coffees (even for nespresso)  and other merchandise – just to the right is where you can order, but there’s a little confusion, because there can sometimes be 2 queues – one eating to order and one awaiting their orders. The female baristi are hard at work, focusing on espresso using the La Marzocco linea machine and filter simultaneously, with another lady taking orders. They have many delectable cakes – the lamington being the most famous – haling from Australia – it looks like a chocolate sponge wrapped in coconut flakes. In this trip I ordered a daily cappuccino.

I definitely think that the department of coffee and social affairs should have a price for their name, as I think that it is just one of the best names for a coffee shop.

Now back to something new. On our last day, we had to move to a hotel in Russell Square and has ing being starved of my daily coffee from an expert, I decided to head over to Continental Stores (Store Street Espresso sisters shop), but as I approached they had already closed. Walking back dejected, I noticed this really arty looking place, selling coffee – advertised as an art gallery selling specialty coffee. Never one to back down on a coffee challenge, I went in, noticing their La Marzocco Linea machine. I took in the sights, or should I say the art and atmosphere – it was quiet, as after all it was late afternoon.

I decided to order a daily Cortado and of course I couldn’t resist my favourite pastry, Pasties De Nata from Portugal, as a tasty accompaniment.

I really enjoyed my coffee – a blend using Brazilian and Uganda arabica coffee. Afterwards, I had a chat with the barista, Tim and he told me about their roaster, Redemption Roasters. If I wasn’t already loaded with coffee from my exploits, I would have bought one of the coffees but next time.

 

I hope you enjoyed your coffee exploits in 2019 like I did, especially in London. Oh! What was that one commonality of the shops – did you spot it? They all had La Marzocco Linea espresso machines. I was at Gold Box Coffee Roastery in Dubai

Finally!

Ever since I heard about Gold Box Roastery in 2016, I have been trying effortlessly to visit them. However, the main reason I was unable to visit them in the past 3 years was because although they open for 6 days a week, they are always closed  Fridays and whenever I used to stopover in Dubai for 48 hours, the only full day I had was, Friday. So, on this occasion, as my stopover was from Saturday to Sunday and when asked by my friend where I wanted to go, I naturally said, “let’s try Gold box roastery”.

Situated in Warehouse #7, Building: SMARK 3, Umm Suqeim Rd. East, Near Mall of Emirates Next to Warehouse Gym Al Quoz Industrial Third, the industrial but arty district of Dubai, you could easily miss Gold Box roastery, like we almost did – google maps isn’t always the best for this part of Dubai. Luckily as determined as we were, we found it. As you enter, you could be excused for thinking you’ve walked into a coffee warehouse – right in front of you is a custom made purple La Marzocco GS3 espresso machine – giving the indication that pouring 100s of cups of coffee per day is not their focus. Behind the barista station, also decked out with filter brewing options and a mahl konig grinder, is where the action is, as you can just glimpse the coffee roasters – yes, there’s more than one – this is a coffee roastery. To the left of you, you will see bags and bags of coffee sacks, containing waiting to be roasted green coffee from al over the World, selected carefully by the owner.

The sitting area is small, decked with their theme, purple. Whilst visiting, the customers that stopped by, were regulars, stopping over on their way to somewhere, sitting briefly to drink their “black gold” or buying lots of bags of wholesome coffee to take home.

On the right is an impressive array of coffees on sale with an enticing logo to accompany the delicious coffee beans inside. If you just edge your eyes atop of the coffee bag rows you will see a placard – owner, Barbara Croce awarded as a Q Arabica Grader by the Coffee Quality Institute – now if you don’t know what that it is, here a short explanation

The certification is useful for purchasing coffee, selecting roast profiles and production/processing methods, understanding coffee origins, and more. It allows (them) to communicate objectively about quality throughout the entire coffee supply chain. (source: perfectlydailygrind.com)

In short, Q-graders are like the superheroes of the coffee industry. It allows them, once qualified to detect quality right through the coffee process, enabling them to know how to choose coffee and grade it for its quality, let alone, know how to get the best out of the coffee.a custom made purple La Marzocco GS3 espresso machine – giving the indication that pouring 100s of cups of coffee per day is not their focus. But wait, there’s more.

I walk over to a lady and exclaim, finally I have found this place after many years of trying – I noticed that the lady had an air about her, relaxed but confident. To my pleasant surprise it was none other than Barbara herself. Great! first of all we just about find the place and secondly, I get to meet the owner herself.

In fact, to the detriment of my friend, even though he was very polite about it, Barbara and I spend the next 1-2 hours talking about coffee – I learn about there commitment, her vision to make the Dubai roastery world class (her first one is in Newcastle, north England), her family history in coffee, her commitment to understanding coffee by living on an actual farm for a few months, her expansion plans, right opposite their current site, which will become a training school too, the expertise of her staff (one of them Lyndon Recera was UAE barista champion for 3 years in a row until last year – see my previous post on Typica) and much, much more.

It’s only after chatting for a while, that I noticed that I hand’t even had my cup of gold.

I chose a fruity blend as I actually like fruity blends in my milk based coffee. Afterwards, I looked at the impressive display of coffee and was totally spoilt for choice, so of course I ask Barbara to advise me, as I wanted a coffee that would be great for espresso and filter, so I selected the Bolivian Caranavi with tasting notes of fig, dark chocolate and nougat to name a few.

Just before we left, Barbara kindly gave me the invite only to the opening of Typica (previous post), as I presume she had detected a real coffee nerd in me.

Definitely one of my best coffee experiences and looking forward to hearing more from them and their new barista academy.

Is this My Favourite Coffee Shop in the World? Prufrock Coffee, London

I often get asked, “So, Lameen what is your favourite coffee shop in the World?”. It’s a bit of a tricky question, because the modern age consumer doesn’t get easily satisfied with just the product – they want an experience. Sure, I’ve had great coffee in cafes, where I wished they had been a bit friendlier and the opposite holds sway too – good customer service but mediocre coffee. I often try and process that very quickly but I see that the questioner starts to get impatient – expecting me as a coffee lover to just pop out the answer. Furthermore, they get even more impatient when I start saying for espresso, it was…. and for filter, it has to be….. and I just really loved the concept and the staff at…… So, not to burden them with my complicated musings, I will default to Prufrock Coffee in London. And, you guessed it, “but why?”. Then I think to myself, if I have to start explaining the experience, that it was started by a former WBC Champion, that companies approach them to test new technology, that they started using reverse osmosis water, that they have a great barista academy, that they gave me a free barista tasting session, that I learnt a lot from chatting with them for hours, etc. Then they tune off.

So, I thought to myself, actually, when was the last time I visited Prufrock coffee and I realised shamefully that I hadn’t been back to Prufrock Coffee for about 6 years. After all, my post on my first visit in 2011 (read here) was so popular that the tweet advertising it, was retweeted by Square Mile Coffee Roasters and got me my most hits back then in one day – over 300. In addition, one of my pictures, when I used to use a Nikon Camera for all my coffee and food photos – was liked by Prufrock so much, they gave me a free tasting class – read here. So, I was well overdue a visit.

Located on 23-25 Leather Lane, Prufrock is on a busy week day market street. It is unusually big for a classic London specialty coffee shop and on their website, they even highlight that. I won’t go into the aesthetics, as you can read that in my original posts from 2011, however somethings have changed – more retail space to sell coffee, t-shirts and more and a stronger focus on food, without compromising on coffee of course. Prufrock are still very closely associated with Square Mile, so you can buy their coffees here too.

As you can see from above, they are very much still into the provision of both barista and specialised “coffee ” related training. Their website offers more options and if you recall from one of my earlier posts in 2019, I mentioned that they new coffee roasters in Vienna, Jonas Reindl, were trained by Prufrock. So a Coffee Lover’s Dream – Prufrock it still is. and I know that if I want to take my aspiring coffee career to the next level, it will start from Prufrock. In fact, even though I know it was lunchtime, it was quite busy and I just about got a space to sit. I noticed also, that a few tourist were visiting, buying souvenirs.

Now to the the coffee and my visit.

Visiting at lunchtime was probably not the best idea, but I needed great coffee as early as possible in the day. As you can guess, their fame has blossomed and not only was the cafe busy with what looked like regulars, but a few touristy looking customers were also paying homage. In fact I was lucky to get a sit, which was pleasantly opposite the brew bar, decked with the Victoria Arduino VA388 Black Eagle and accompanying Victoria Arduino coffee grinders.

 

For the coffee, they had two choices and if you have time and are serious, you can enquire which blend would be good for the type of coffee you desire – I was so excited to be “back” that I ordered two; the fruitier version as an espresso and the not so fruitier one as a piccolo.

 

Great of course. I started with the espresso and finished off with dessert – the piccolo.

After my coffees I wandered over for a chat to meet the baristi, Jake, who took my order and Aga, who prepared them. As Aga was busy making more great coffees, I had a chat with Jake, asking him about how long he had been working there and sharing with him my passion for coffee, etc. Very friendly, adding the experience of course. Before I left to rejoin the family, I noticed a delicious looking cake – I can’t remember now, but it had a rosemary and strawberry – very unique and the size of the slice was enough for two, so I bought that together with Square Mile’s Palestina Coffee for filter brewing.

Ah! so happy I went back and I pray it won’t be another 6 years before I visit. Still a great place for coffee and I think when I visit again, I’ll be doing more than just drinking coffee as I plan to start investigating adding the word “coffee” into my next career path, God willing.

So, is Prufrock my favourite coffee shop in the World? If I wanted to ask anyone or start a serious coffee career, they will top my list no doubt because I know that they are completely dedicated to coffee.

I was @ OR Coffee Roastery, Brussels

This is like part two of my previous post, when I visited Brussels to attend the ICO SDG Coffee Symposium. Prior to visiting for the day, I obviously checked out the speciality coffee scene in Brussels and although few came up, the one called OR Roastery stood out. In any case from what I could deduce from the map, there was one centrally located but I wasn’t sure if it would be near the symposium. As I had not been to Brussels in like ages (my memory puts me visiting there around 1987 and that was a long time ago) I was looking forward to visiting again, albeit for a day.

Although there was coffee during the coffee break, my fussy palate was not satisfied with what was on offer. Having arrived late and after spending my lunch break networking with the coffee aristocrats, I decided that during the next coffee break, I would wander not too far to look for OR Coffee and wow! It was like God wanted me to visit, because would you believe it, right outside the Sofitel Hotel where the afternoon sessions were taking place, was the OR Coffee shop I was looking for – located on the corner of Place Jourdan and Rue de Cornet.

As I walked in, it had that air of Anglo-Saxon and by that I mean you could be in London,  New York or perhaps Australia, with green tiles, wood and exposed brick and copper pipes overhead – a relaxed atmosphere, with displays of their coffees, gadgets, etc. to the right hand side – see pic at the top. It was quietish but not empty. In fact it was a bit too relaxed for me as I was eager not to miss any of the sessions and waiting about 10 minutes for my coffee, made me a bit impatient even though I was second in the queue but I didn’t know that people sitting down were still waiting for their coffee. In short, don’t come here rushing for coffee, at least not at 3pm in the afternoon, but I’m sure that they can handle crowds during rush hour. In any case, it gave me the opportunity to walk around to stretch my legs and soak up the atmosphere, browsing their menu, which reminded me more of a London cafe especially when I saw their cakes, cheesecake, red velvet, etc – oh! how I wished I had come here for lunch instead. Walking over to their coffees, I was pleasantly surprised , after having just mentioned to someone that I haven’t seen Tanzanian coffee for years, to see a Tanzanian espresso blend, which I grabbed very quickly with a smile.

 

Eventually I got my coffee, brewed on a  La Marzocco GB5, served by amiable staff a flat white, with two shots, using their house blend – just what I needed.

In short, they are the first specialty coffee power house of Belgium – they roast, they teach you how to roast, set up a coffee business, provide coffee to your office, have a few locations and more.

Upon my return home I was happy to have purchase their Tanzanian Espresso Blend.

The bag says rhubarb and high acidity, but for me it was the aftertaste even with milk, coating the outside of your tongue with a berry like acidity – delicious and something I haven’t had in a while – tempting for me to order for delivery to Vienna in the not so distant future.

So, in summary, if you visit Brussels, try and visit OR coffee along with the other speciality coffee shops you may find on your list.
