Have you ever been to a Coffee Roastery in a Mall?

Well, the answer for me is YES… and perhaps I should add, only in Dubai.

Just last week, I was meeting a friend at the Galleria Mall in al Barsha, Dubai (the neighbourhood behind the Mall of the Emirates – the one with the ski slope) and upon entering I saw a coffee shop, La Gente.

Always the sceptical coffee snob, I decided to pop my head in, where I saw a Synesso machine to my right, lots of roasted coffee in retail bags, coupled with their black and grey marble interior. On the left they have seating on high tables but they also have seats outside the coffee shop. I then walked further in and spotted this….

A Probat (think, Mercedes of coffee roasters and yes, it’s made in Germany). Impressed I promptly asked “do you actually roast coffee in this machine in this mall?” and they replied “yes sir”. So, I thought “I can’t really come in here, quiz them and not order coffee”. So as soon as my friend joined me, we went for it together with some cakes… blueberry, ummm!.

First up, they have a variety of coffee on order. For espresso, they had a Brazil, which my friend took and then I asked them for their house blend… Brazil, Ethiopia and Costa Rica… aha! now this might not seem exciting to you BUT for me it was, why ?

Lets rewind to 2008-2009 – this was the era of espresso blends – the time before single origin was even thought off for espresso.

so, fast forward to 2022 and the main reasons why I was excited by this blend is because this exact combination was indeed the flavour of the years back then, because you used

Brazil for body, crema and chocolate and nut

Costa Rica for acidity

Ethiopia for fruitiness

so, now guess what I ordered …

Yes, it was flavourful as I got to sample a mirage of fruit, medium acidity and hints of almond and dark chocolate.

If I’m ever at that end of Dubai again, I’ll try their filter blend options, for which they were offering three options.. see below

Coterra: A Hidden Dubai Coffee Spot

Always out for a scent (pun intended) of coffee adventure, I asked my fellow coffee geek, Naveed, for this favourite new coffee spots in Dubai and I was presented with two options, and I chose Coterra, located in Umm Ramool, near the airport and closet to me as I had run out of espresso coffee and needed coffee quick – and no, I’m not an addict – I just like or should I say, love coffee. I was even surprised that a coffee shop existed in this part of the bustling city that Dubai is and to be honest, had to check google maps twice to make sure I wasn’t headed in the wrong direction – confession … on my way there, I took the wrong turning.

So, upon arriving you are greeted with this Muriel of colours – in fact it reminds me of something you might find in another part of the World, like in South America. Okay, let’s go in.

Upon entering, it was like a hidden gem indeed. I was greeted with a brew bar to my right accompanied with a complimentary cup of Arabic coffee by, I presume the cafe manager and to my left I spotted not one but two Giesen coffee roasters covered in their brand colours of green of course – I hasten to add, Giesen is a fave with serious coffee roasters.

As I walked further into the cafe to take some pictures, I also noted what looked like a sensory lab… decked with a coffee tasting chart – the wheel of fortune for all coffee sensory nerds.

Already looking impressed, I noticed a gentleman walking up to me and I did this thing that my wife always rolls her eyes – yes, having travelled extensively in Africa, I try and spot accents as a way to connect with people and I instantly picked up head barista, Mickey’s, as being from Kenya. After exchanging greetings (Karibu is welcome in Swahili) adding that I had been to Kenya several times and to the famous Coffee Research Institite in Ruiru, just outside Nairobi, Mickey had this look that if I could read minds, could be summed up as “oh, this guy knows and loves coffee” , so he presented me with a few options for tasting their coffee over my two hour stay.

First up, was a Costa Rican coffee for my daily cortado. I must confess, I was highly skeptical as my previous memories of Costa Rican coffee is that they tend to be on the higher acidity side, not bad for filter but as an espresso, I didn’t really want to drink something that might remind me of orange juice and milk – the two just don’t mix, literally.

Looks good doesn’t it? My skepticism disappeared after the first sip, as my tongue was washed with subtle fruit with hints of caramel and berries, but not over bearing. Of course, I then quizzed Mickey about how he had brewed my coffee, to which he explained the process adopted using their Dalla Corte “zero barista” espresso machine. So, here’s a short diversion for the coffee geeks.

In summary, the espresso machine is built with a Digital Flow Regulation (DFR) using an exclusive and patented technology that allows you to digitally control the quantity of water whilst you extract an espresso – this is important because this is where aromas and flavours are developed. By being able to regulate the flow, you can vary acidity, sweetness and body according to the requests of your customers, leading them toward a new concept of tasting. So, what does that mean ? In short Mickey was able to manipulate the coffee and reduce the acidity whilst brewing my coffee, WOW! I love learning new stuff about coffee.

Before I left, I had an espresso on the house and an exquisite Colombian coffee, brewed on the Hario V60.

I was also lucky enough to meet with the pleasant owner, Mohamed, who gave me his card and explained the name behind the brand – CO for coffee and TERRA(latin for land), so “coffee land”. He also mentioned that his partner is from Nepal.

I left with two bags of coffee roasted for espresso, one, their Space Blend and the other, can you believe it? Costa Rican, roasted for espresso.

In short, if you are on the way to the airport and want a quick good tasting coffee before you fly, then make this your last stop. Otherwise, it isn’t that far from downtown Dubai – say 10 minutes drive. As of now I’m still enjoying their coffees.

The Myth of Freshly Roasted Coffee Part 2: The Taste Test

Welcome to Part 2 of this myth busting series about Freshly Roasted Coffee… the real test, which relates to how does coffee roasted several months ago, taste. Even though coffee can still smell fantastic, does it taste good too? Have you always been told that after 3-4 weeks of a coffee being roasted it won’t taste nice? A side note – did you know that according to the Specialty Coffee Association (SCA), 80% of our taste is reliant on our smell ? Well 🤔 here’s a video debunking that myth as I now prepare and taste a coffee roasted 4 months ago, an Ethiopian coffee roasted for Mokha 1450 – a cafe in Dubai, which I was gifted by its proprietor , Garfield.

My recipe was

15g of freshly ground coffee

225ml of 95C hot filtered water (I use 95C with a ceramic V60 because the ceramic will extract some of the heat – another tip from an expert)

Pour for 50g and then the remaining 175g

Timed pour around 3 minutes max

Launching My Espresso Blend

I’m so excited to let you know that on 2 March 2021 I launched my first ESPRESSO BLEND coffee in collaboration with Sippy Beans of Dubai, UAE. I always believe that if you are really passionate about something and try your best to persevere with faith and determination to live your dream, you will experience it in some way. This isn’t my first journey of living my dream as you know, because back in 2009, I moved to Cape Town to open up my first coffee shop, called Escape Caffe, which I eventually sold for multiple personal reasons in early 2013.

So, when in October 2020, upon just moving to Dubai, I met with Shehzeen of Sippy Beans (a Dubai based online coffee retailer) I was asked, after talking about coffee for hours, she asked how we could work together, I dared to say, because I had dreamt about it and wanted to articulate it for REAL, that “can we launch a coffee brand using From Coffee With Love”, she said YES almost immediately. Now, who said that dreams don’t come true.

You may be wondering why I have called the espresso blend the “drink of the escapist”, so check my video here to experience my excitement.

In short, we worked with one of Dubai’s premier coffee roasters and after having tasted about 10 different blends, I knew that just one sip of what would be become my first espresso blend was all I needed. It just hit the spot, it was so unusual for me and I knew it was a bit unconventional, like LOVE of course, something that cannot be easily explained.

As I usually drink my espresso based drinks with milk, you’ll find hints of chocolate, spicy vanilla, with medium/low acidity and a long lasting caramel taste – so you’ll be looking forward to your next cup.

I always believe that you should follow your passion and pursue your dreams with perseverance as you never know who God will place in your path to make that dream a reality.

I was at Cypher Urban Roastery, Dubai

Before I delve into this new post and just in case you were wondering…. Yes! I’ve moved to Dubai, UAE. Over the last few weeks, if you’ve been following me on Instagram, you would have noticed under my stories that I’ve been visiting many cafes and roasteries. On the latter, you would be pleased and coffee fixated to know that Dubai has many coffee roasteries – in fact I think someone should do an analysis of the amount of coffee froasteries per square mile/km within this bustling coffee fixated city.

One one such trip, I decided to visit Cypher Urban Roastery, after seeing a price on them on CNN, where they talked about the challenges during the pandemic of 2020.

On entering their roastery, situated in the coffee roastery district of them all, Al Qouz District, my fellow coffee nerd, Naveed and I were approached by a gentleman, who came out of his office and greeted us calmly. He then proceeded to offer to make is a coffee, for which we naturally went for a cortado, which he brewed using a Ugandan arabica.

Hints of sour cherry caramel came to my taste buds.

After that, he showered us with extensive coffee knowledge, nit just about Dubai but also about roasting and sourcing beans, which led to another culinary experience, where he brewed not just one, but two very special coffees from an extraordinary lot from Colombia using the Hario V60 method. If my memory serves me correctly, they were rated number 1 and 2 respectively in Colombia. Both were naturally from Cypher’s Nobility line, which means they are highly rated, cupping over 90.

The second one was still very special and was very fruity.

After that he gave us a tour of their roastery, from bag storage, to roasters, packing station and distribution outlet.

All in all, a fantastic coffee experience, made extra special by Milo Sekulovic, a very modest gentleman indeed hailing from Serbia and of course, a Q grader and specialist coffee roaster.

I was at The Espresso Lab, Dubai

In honour of International coffee day on 1 October 2020, I decided to treat myself at one of Dubai’s iconic specialty coffee shops, The Espresso Lab, located at Dubai Design District. In fact this was my second visit, as I had visited them at the previous location in 2016, read here.

As you enter, you are greeted with a brew bar, featuring a Synesso espresso machine and many filter brew options ranging from cold drip, Hario V60, khalifa wave, etc and more, see pic below.

What was unusual for me, was the number of staff present. Let me explain; following the pandemic , I’ve noticed that most food and beverage establishments have cut down considerably on staff. I’ve always been in two minds about this because I always believe that this compromises on service delivery. Can you really provide the same level of quality customer experience ( I prefer this to service) with less people? Well, I don’t think so.

So, back to espresso lab. For me, with this amount of staff, it gave the impression that they were very focused on the customer and that each staff had clear guidelines on their job, so well done espresso lab.

Now, to the coffee. I love that they don’t serve espresso to go and don’t offer sugar, yay!

I knew I was craving espresso based coffee as I had to leave my espresso machine in Vienna until it is air freighted. On offer were 3 single origins; India, Yemen and Kenya. Now, if you know a bit about coffee origins and taste profiles, you’ll know that these choices are very unusual, especially for espresso. In case you are wondering, it’s very rare to brew Kenyan coffee on an espresso machine mainly because of the typical profile of bold, berry and citrus flavours. Although very uncommon at the moment, I must say since I’ve moved to Dubai, I’ve had close contact with Yemeni coffee, so, I decided to try the Kenya coffee. And wow! I wasn’t disappointed, as this was for me, one of the best milk based espresso drinks of 2020, a true treat, praise God. Well done to the barista Wael, who I quizzed endlessly before I placed my order. I salute his patience.

After that delightful experience, I knew I needed something sweet, so here comes the mini double layer carrot cake, topped with rose petals, another delicious treat. To compliment this experience I had a short black, americano with less water and discovered a book, “the monk of mokha“, which a friend mentioned to me a few years back, that I would like to buy and read.

Their menu is different and I plan to visit their newly opened roastery with another coffee nerd soon in order to learn more.

So, when in Dubai, I highly recommend a visit to espresso lab, located in building 7, Dubai Design District.

Here’s my first video of my new series, coffee of the week, in which I share with you which of the coffees I had during my week that impressed me the most, whether as a filter brew or as an espresso.

My first video celebrating the impressive Kenyan coffee I got at Nightjar, Dubai. Here, I’m using Hario V60, based loosely on the James Hoffmann’s method;

  • 15g freshly grinded coffee
  • 245ml 95C water
  • Hario V60 with filter paper made wet with some hot water

With this method, the coffee was really fruity with dark berries, citrus acidity and full bodied, with a long aftertaste round the middle of my tongue. 

 

 

 

 

 

I was at NightJar Coffee, Dubai

Lucky me…. really. I was in Dubai in mid-March, just before the lock down, flight bans, quarantine and more and just got back to Vienna on the last couple of flights until July 2020.

Back to lucky me…. I was actually in Dubai to investigate the possibility of moving there to set up a business/life coaching consultancy, which would also involve… you guessed it… working as a coffeepreneur. In any case, I was talking to Yashood, head barista of %Arabica on the Dubai cafe culture, specifically on the explosive coffee roasting trend and he recommended that I check out a newish joint, Night Jar – located in the trendy arty district, called Alserkal Avenue. I must admit that during our family vacation in July 2019, we visited Alserkal Avenue to check out a chocolate cafe/factory and I walked by Night Jar, but it looked closed, so I never ventured in.

LUCKY ME… because even with just one week in Dubai during these tough times, I was still able to discover and experience great coffee in Dubai.

Night Jar is located at Unit G62 Alserkal Avenue Al Quoz Industrial 1, close to the main entrance and you could easily miss it,  as the exterior is darkish with glass doors and their logo on top. As you walk in, there are rows of coffees on the right hand side for you to buy,

If you look slightly to your left, you’ll see a tiny hallway feature that looks closed to all but staff (I found out later that this passage leads to the roasting area, equipped with a Geisen coffee roaster). As you look further to your left, you’ll see the brew bar and delicious looking cakes on display. They have a BlackEagle espresso machine –

Being inquisitive, I asked about their roaster and was introduced to Chad from Cape Town, who previously worked for Truth Coffee for 5 years (an insight – when I moved to Cape Town in 2009 my initial plan was to launch Truth Coffee with David Donde but I felt that my heart was somewhere else – a lesson for anyone chasing their goals, which I also write about daily on Instagram as honestmanagement) – Nevertheless, what a coincidence, that I walk into a cafe in Dubai and the roaster used to work for a place I almost started out at. In any case during our brief chat, I could tell that Chad is a no nonsense kind of coffee guy – focused on sourcing and roasting the best with an innovative edge. He recommended that I try an espresso of their Colombian coffee, which was about to finish

I must confess it was one of the best espresso I’ve had in a cafe for a while – well balanced between acidity and fruity undertones and smooth to drink.

I couldn’t agree more.😋

However, I definitely needed to buy their coffees – Chad suggested their Rwandan coffee for espresso and the Kenyan for filter, which he very kindly refused for me to pay.

I was also tempted to buy a slice of cake, but we had just had one at Tom&Serg around the corner – my daughter was slightly upset as she said “daddy, we could have had these nice cakes here…” next time God willing.

More about NightJar – they source micro and nano lots, so their specialty coffee offering is really special as you might taste something incredible one day that may not be available the next – so buy the bag whilst you can. Their interior is L shaped, cosy and intimate – they also offer food and their menu looks great, I mean stuff like pulled ox benedict, Nigeria love rice, NZ meatballs, veggie specials and more – yum! so next time, I plan to make a meal of it (coffee, lunch and dessert) God willing. They offer nitro coffee, which is a sort of cold brew coffee charged with nitrogen to give it a rich, creamy head, similar to nitro draft beer like Guinness – in fact at Nightjar, the brew heads for nitro coffee look like how beer is dispensed but being Dubai, there’s no beer here.

Before I sign off, I have mention that I really love their fun theme on their packaging.

Very innovative.

I plan to meet their owner, who hails from New Zealand and who coincidentally again, is known by one of my contacts in Dubai.

I was at Gold Box Coffee Roastery in Dubai

Finally!

Ever since I heard about Gold Box Roastery in 2016, I have been trying effortlessly to visit them. However, the main reason I was unable to visit them in the past 3 years was because although they open for 6 days a week, they are always closed  Fridays and whenever I used to stopover in Dubai for 48 hours, the only full day I had was, Friday. So, on this occasion, as my stopover was from Saturday to Sunday and when asked by my friend where I wanted to go, I naturally said, “let’s try Gold box roastery”.

Situated in Warehouse #7, Building: SMARK 3, Umm Suqeim Rd. East, Near Mall of Emirates Next to Warehouse Gym Al Quoz Industrial Third, the industrial but arty district of Dubai, you could easily miss Gold Box roastery, like we almost did – google maps isn’t always the best for this part of Dubai. Luckily as determined as we were, we found it. As you enter, you could be excused for thinking you’ve walked into a coffee warehouse – right in front of you is a custom made purple La Marzocco GS3 espresso machine – giving the indication that pouring 100s of cups of coffee per day is not their focus. Behind the barista station, also decked out with filter brewing options and a mahl konig grinder, is where the action is, as you can just glimpse the coffee roasters – yes, there’s more than one – this is a coffee roastery. To the left of you, you will see bags and bags of coffee sacks, containing waiting to be roasted green coffee from al over the World, selected carefully by the owner.

The sitting area is small, decked with their theme, purple. Whilst visiting, the customers that stopped by, were regulars, stopping over on their way to somewhere, sitting briefly to drink their “black gold” or buying lots of bags of wholesome coffee to take home.

On the right is an impressive array of coffees on sale with an enticing logo to accompany the delicious coffee beans inside. If you just edge your eyes atop of the coffee bag rows you will see a placard – owner, Barbara Croce awarded as a Q Arabica Grader by the Coffee Quality Institute – now if you don’t know what that it is, here a short explanation

The certification is useful for purchasing coffee, selecting roast profiles and production/processing methods, understanding coffee origins, and more. It allows (them) to communicate objectively about quality throughout the entire coffee supply chain. (source: perfectlydailygrind.com)

In short, Q-graders are like the superheroes of the coffee industry. It allows them, once qualified to detect quality right through the coffee process, enabling them to know how to choose coffee and grade it for its quality, let alone, know how to get the best out of the coffee.a custom made purple La Marzocco GS3 espresso machine – giving the indication that pouring 100s of cups of coffee per day is not their focus. But wait, there’s more.

I walk over to a lady and exclaim, finally I have found this place after many years of trying – I noticed that the lady had an air about her, relaxed but confident. To my pleasant surprise it was none other than Barbara herself. Great! first of all we just about find the place and secondly, I get to meet the owner herself.

In fact, to the detriment of my friend, even though he was very polite about it, Barbara and I spend the next 1-2 hours talking about coffee – I learn about there commitment, her vision to make the Dubai roastery world class (her first one is in Newcastle, north England), her family history in coffee, her commitment to understanding coffee by living on an actual farm for a few months, her expansion plans, right opposite their current site, which will become a training school too, the expertise of her staff (one of them Lyndon Recera was UAE barista champion for 3 years in a row until last year – see my previous post on Typica) and much, much more.

It’s only after chatting for a while, that I noticed that I hand’t even had my cup of gold.

I chose a fruity blend as I actually like fruity blends in my milk based coffee. Afterwards, I looked at the impressive display of coffee and was totally spoilt for choice, so of course I ask Barbara to advise me, as I wanted a coffee that would be great for espresso and filter, so I selected the Bolivian Caranavi with tasting notes of fig, dark chocolate and nougat to name a few.

Just before we left, Barbara kindly gave me the invite only to the opening of Typica (previous post), as I presume she had detected a real coffee nerd in me.

Definitely one of my best coffee experiences and looking forward to hearing more from them and their new barista academy.

Dubai Coffee Scene 2018: The Roasters

So, Dubai has lots of coffee shops now, but who is supplying them with their main commodity – roasted coffee beans ? If you are an ardent follower of my blog, then you’ll know that as far back as 2008, I found out that Kim, was moving to Dubai to start a coffee roasting business, Raw Coffee. Back then I found this very interesting but also very brave, because Dubai was awash with coffee chains, stuck in the first wave of coffee – just drinking from the World leaders in coffee branding (Starbucks, Costa, etc) and Kim wanted to start roasting for speciality coffee – back when there wasn’t even a single coffee shop in the whole of Dubai, let alone the UAE that cared what coffee should taste like.

Fast forward to 2013 and Kim already some clients – Tom&Serg and some restaurants – things were moving but still Dubai only had one speciality coffee roaster. It wouldn’t be until about 2015, when the guys behind Tom&Serg decided to launch their own coffee roasting business – now called Encounter Coffee. Sure there were some others roasters popping up like Coffee Planet and eventually Ortis, whose coffee you can buy at Dubai Duty Free and drink at a few cafes, like Dean&Deluca but specialty roasting, focussing on direct trade, sourcing the best coffee and investing in roasting profiles and aiming to compete at the World stage, not much, until now.

So, now they have %Arabica Coffee Roasters, Seven Fortunes, Stomping Grounds, Gold Box and Specialty Batch, whose coffees can be found across many of the new coffee shops. From the personal conversations I’ve had with them, they seem to have been started by Emirati businessmen who loved coffee and wanted to replicate something in their own lands, hiring professionals from abroad to train their own staff, which seem quite competent now. They tend to roast in the al Quoz industrial district, which I’m sure if you visit, near Mall fo emirates, will smell like coffee land. On my last trip I discovered Grandmother (unusual name), Grind and Emirati Coffee, but I’m sure there’s more that I’ve missed. Here’s a snapshot of them

%Arabica

Obviously just roast for themselves as they are a branded coffee shop. They have a wide range of coffee from “normal” to 90+. Their house blends tend to be darkly roasted with a chocolate bias and their much wider range of filter coffees are too numerous in taste profiles to mention. You can buy coffee from their shops, ranging from about US$13 for about 200g to US$150 for their top coffee (usually Panama geisha) – yes, you read that right; US$150 for 200g. This is Dubai and the fact that a coffee shop offers coffee to buy over the counter at that price must mean that they have customers willing to pay that. I have never seen any coffee shop in London selling at that price range but I guess if you wanted something like that it can be arranged. In any case, I presume that %Arabica don’t spare any effort in trying to purchase the best green beans to roast. To finish, you can buy these special coffees to drink at their shop – see my last post and from what I tasted they are quite good at roasting.

Seven Fortunes

I first tried this coffee at Culinary Boutique (see my post in 2016) and was so impressed with their fruity bias, that I bought a bag of their coffee to take how with me. They seemed to have grown in stature and popularity and now have outlets that serve their coffee. Visit their website to buy coffee, get brewing guides, pay for training sessions and more. Specialty Batch

Growing in popularity especially as they distribute Synesso espresso machines, which from my last visit was very prominent as well as Slayer espresso machines. On the coffee front, they seem to also have a wide range of outlets serving their coffees (depresso from my last post). You can also buy coffee from their website.

Emirati Coffee – the Return of Omni Roast

Last but not least and I have to say, wow! why, because, although they are new on the scene, they seem to have propelled themselves. They roast at Al Quoz too and you can buy coffee from their pop-up shop at Dar Wasl Mall – see my last post or by visiting them at their roastery – Al Quoz Industrial 3, Dubai. As I mentioned in my last post I bought a bag of their coffee, Ethiopian Edido, Yirgacheffe, which they assured me was roasted using the Omni method, which from Perfectly daily grind blog means;

Omni roasting embraces the idea that any coffee can be brewed using any method. So long as the coffee was roasted well, it’ll play well across a variety of brew methods – be it press, filter, espresso, or even cold brew.

That doesn’t mean that every coffee will taste the same in every brew method, of course, or even that every coffee will suit every brew method. A French press will highlight a coffee’s body and perhaps its dark fruit notes. An espresso will highlight acidity and, if they are present, citrus notes.

In short if a coffee is roasted this way you can brew it in many ways, espresso and filter style. I must confess whenever a roaster tell me this, I am usually sceptical – why ? Because whenever I get home and try the beans, whilst they may pass the filter brewing style (aero press, Hario V60), they always fail the espresso brewing method, until NOW.

I’ve only had one beautiful omni roast experience and that was by Square Mile, their Brazilian arabica coffee CAPAO CHAPADA DIAMANTINA or Capao (so good it has to be in CAPs) – read here.

Emirati’s Edido is definitely a close second behind Capao and that for me is a fantastic rating, because with this coffee I really enjoyed brewing it – such a shame I didn’t buy a 500g bag. Everyday, I didn’t know which brewing method to use to get the best taste profile out. With espresso, caramel and almonds with a hint of red berries and with aero press, more red berries and with Hario V60, more dried grapes and floral.

But as they say, all good things must come to an end, at least with culinary delights.

In summary, I think no real place can call themselves a coffee capital without some serious attention to locally based coffee roasteries and hats off (well done) to the Dubai and Emirati based coffee connoisseurs for tasing their game to roasting specialty coffee style. I look forward to checking out gold Box and any other newbies in the Dubai coffee roasting scene.
